“礼之用,和为贵”:21世纪的人类餐桌文明


“夫礼之初始诸饮食”为主题的第五届亚洲食学论坛20151016-18日在孔子诞生地曲阜隆重举行。为继续阐扬论坛主题、光大文明进步的食礼思想,我们与会全体代表一致重申:

各种语言的人们越来越频繁的近距离接触,各种文化前所未有地交流、吸收、接纳,“地球村”时代,人类餐桌的意义日益凸显,而餐桌情态的诸多文化异象,正表明餐桌文明建设已经成为重要的时代问题。文化有根——理应尊重,文明无界——进步必然。

餐桌文化是一定社会族群进食的习惯好尚、行为风格。餐桌文明表达的则是人们食物选择与进食行为的时代进化水准与风格。历史上的中国号称“礼仪之邦”,《周礼》、《仪礼》、《礼记》等先秦文献有关于饮食礼仪的非常细密的记述。

体现“孔孟食道”的“中华餐桌文明”曾经令世界艳羡。孔孟食道的精神与原则是:敬畏自然、感恩造物、珍惜食物、追求美好、遵时守节、注重卫生、讲究营养、恪守文明。“孔孟食道”是全体人类的历史文化遗产。

“夫礼之初始诸饮食”是人类文明史的规律与基本常识。食礼所以重要,餐桌进食仪礼所以不可忽视,因为餐桌是人生斯文修养的起点,是社会美好人生的基点。“没有哪一种社交场合能像公共聚会宴饮那样对一个人的修养与资质做出淮确测评的了。”儒雅得体的餐桌修养未必就是淑女、绅士,但餐桌的失范必定是身心修为欠缺的遗憾,而且结果往往事与愿违。人类任何文化几乎无一例外地十分重视餐桌仪礼,我们将其命名为“餐桌第一定律”。

睿智探索和勇于担当的中国食学家们深刻反省本民族的饮食文化,实事求是地研究历史和现实,对中华民族的饮食生活与文化怀有崇高的期待。他们认为:

当代中国人的失范行为很多,规范应首先从餐桌行为认真做起。1970年台湾地区就已经立法推行公民“仪礼范例”。SARS事件的前一年发布的拒绝食用保护动物的“泰山宣言”曾赢得了国际社会的热情赞许。目前中国大陆正在实行的文明进餐、光盘行动、双筷助食、拒绝饕餮行动,就是重塑中华餐桌斯文的大众心理认同与行为选择。

中国人的餐桌情态与中国食学家们的努力,无疑具有普遍意义。在保证我们的食物营养、安全、环保和追求进食愉快的同时,同样不能忽视行为文明。保证了文明小餐桌,才会更有助于社会大餐桌的和谐。“礼之用,和为贵”,“和……以礼节之。”和平、和谐,和而不同,求同存异,共同发展。这是亚洲食学论坛的宗旨。

食学,是人类自文明史以来就洋溢着无边大爱的关乎生死的实用之学、丰富情感的理想之学,我们的事业关乎人类的昨天、今天、明天,与每一个人紧密相关。世界各国的食学工作者心系一处,我们思考时代大众餐桌的所有相关问题。让我们从东方圣城曲阜出发,遵循孔子的脚步,联袂创造新时代的餐桌文明!

Human Table Culture of 21st Century

 

Fifth Asian Food Study Conference, themed as “FOODS INITIATE ALL RITUALS”, will be held in Qufu, the birthplace of Confucius, from Oct.16th to Oct.18th 2015. In order to further illustrate the theme and spread civilized and advanced food rituals, all our attendants unanimously reaffirmed:

With people of different languages more and more frequently have close contact and different cultures have unprecedented exchanges, assimilation and tolerance, the meaning of "global village" era and human table have become increasingly prominent. Moreover, many cultural anomalies of table modality are indicating that construction of table civilization has become an important issue of the era. Cultures have roots so we should respect, while civilization is unbounded so progresses are inevitable.

Table culture is the preferred eating habits and behavior styles of certain social groups, while table civilization expresses a certain era’s evolving standard and style of food choices and eating behaviors. China is known as "nation with rituals" in the history since there are very elaborate illustration about food rituals in "Rites of Zhou", "Etiquette and Ceremonial", "Book of Rites" and other pre-Qin literatures.

Embodying "Confucius and Mencius Food Rituals", "China’s table civilization" has been admired by the world. The spirit and principles of Confucius and Mencius Food Rituals are: reverence for nature, appreciation towards creation, food cherishment, pursuit of beauty, compliance with manners, hygiene attention, nutrition highlight and civilization obedience. "Confucius and Mencius Food Rituals" is the historical and cultural heritage of all mankind.

"Food Initiate All Rituals" is the rule and basic common sense of human civilized history. Food rituals are so important that we cannot ignore table manners because the table is the starting point of life gentle accomplishment and the foundation of a beautiful social life. “There is no other social occasion like the banquet which can make a more accurate assessment of a person's manners and qualification.” People with refined dining accomplishment are not necessarily decent lady or gentleman, but table discourtesy must physically and mentally be the regret with consequences contrary to our wishes. Any human culture almost invariably attaches great importance to dining rituals and thus we name it as “First Rule of Dining Table”

Chinese food scholars, who are wisdom to explore and brave to burden, deeply introspect the nation’s food culture, keep their feet on the ground to study history and reality and have high expectation towards the Chinese nation's eating habits and cultures. They believe:

Since contemporary Chinese people have many anomies, norms should start carefully from table behaviors. From 1970, Taiwan has been legislating "ritual paradigm" among citizens. "Taishan Declaration", published one year before SARS, has won enthusiastic praise from the international community since it aims to refuse to eat rare animals. Civilized eating, zero waste action, double chopsticks aid and greed rejection, which are currently implemented in China, is the mass psychological identity and behavior choices to reshape Chinese table civilization.

Undoubtedly, there is universal significance in Chinese table modality and Chinese food scholars’ efforts. While ensuring our food nutrition, safety and environmentally-friendliness, and perusing happiness of eating, we cannot neglect behavior civilization. Only after ensuring manners of a small table can we promote a more harmonious world-wide dining table. “Harmony is the great purpose of rituals” and “Propriety is the path to the harmonious state”. Peaceful and harmonious, we seek common ground while reserving differences as well as pursue common development. This is the purpose of Asian Food Study Conference. 

Since the dawn of human civilization, food study is human’s practical science of boundless love of life and death, and the ideal place to enrich our emotions. Our cause is closely related to everyone in respect of humanity yesterday, today and tomorrow. Food study staff from different countries concern about the same issue and think over all related problems of the era’s mass food. Let's start from the Eastern holy city Qufu, follow Confucius’ footsteps and jointly create the table civilization of a brand-new era!
